  • 1 lb ground beef or turkey, chicken, or plant-based alternative
  • 1 can diced tomatoes 14.5 oz can, undrained
  • 1 can black beans 15 oz can, drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 packet taco seasoning about 1 oz packet
  • 4 cups chicken broth
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil

Method
 

  1. Add olive oil to a large pot and heat over medium heat until shimmering.

  2. Sauté the chopped onion until it becomes translucent and fragrant, about 3-4 minutes, stirring occasionally.

  3. Add the minced garlic to the onions and cook for another 30 seconds until it releases a warm aroma.

  4. Increase the heat to medium-high, then add the ground beef to the pot. Break it apart with a spoon and cook until browned and cooked through, about 6-8 minutes.

  6. Pour in the chicken broth and add the diced tomatoes (with juices), black beans, and corn. Stir everything together to combine.

  7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for 20-25 minutes, allowing flavors to meld and the soup to thicken slightly.
  8. Uncover and stir the soup, checking the seasoning. Adjust salt or spice if needed, then cook for an additional 5 minutes uncovered to allow excess moisture to evaporate.
  9. Turn off the heat and ladle the hot, hearty taco soup into bowls. Garnish with toppings like shredded cheese, sour cream, chopped cilantro, or sliced jalapeños, if desired.
