Ingredients
  

  • 1 cup cottage cheese full-fat recommended for creaminess
  • 2 tablespoons fresh parsley finely chopped
  • 2 tablespoons chives finely chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 small garlic clove minced very finely

  • 1 teaspoon olive oil olive oil optional for added silkiness

Method
 

  1. Add the cottage cheese to a medium mixing bowl and mash it gently with a spatula or the back of a fork until it becomes creamy with some curds remaining for texture.
  2. Finely chop the parsley and chives, then stir them into the mashed cottage cheese, distributing the herbs evenly throughout.
  3. Squeeze the lemon juice directly into the bowl, then mix thoroughly to incorporate that bright, tangy flavor.
  4. Mince the garlic very finely and add it to the bowl, stirring to distribute evenly, allowing the garlic’s aroma to meld into the dip.
  5. Season with a pinch of salt and freshly cracked black pepper, then taste and adjust the seasoning as needed.
  6. If desired, drizzle in the olive oil and fold it into the dip to add a silky, rounded texture.
  7. Gently fold all ingredients together until fully combined, then let the dip rest for about 10 minutes to allow flavors to meld and develop.
  8. Serve the dip in a small bowl, garnished with additional herbs if desired, alongside veggie sticks, crackers, or bread for dipping.

Notes

For a vegan version, substitute cottage cheese with blended silken tofu and adjust seasonings accordingly. Chill the dip for at least 15 minutes before serving for optimal flavor and texture.
