  • 2 cups ripe peaches, peeled and sliced preferably yellow or white peaches
  • 1 cup champagne chilled for best effect
  • 2 tablespoons honey or simple syrup optional, to taste
  • 1 cup ice cubes

Method
 

  1. Peel the peaches using a peeler or knife, then slice them into smaller chunks to make blending easier.
  2. Place the sliced peaches, honey or simple syrup, and ice cubes into the blender.
  3. Pour the chilled champagne into the blender, then secure the lid firmly.
  4. Blend on high speed until the mixture is smooth, frosty, and has a slushy texture, about 30-40 seconds.
  5. Stop the blender and check the consistency; if it’s too thick, add a splash more champagne and blend briefly to incorporate.
  6. Pour the slushie into chilled glasses, allowing the icy mixture to mound slightly over the rim.
  7. Garnish with a small peach slice or a sprig of mint if desired, and serve immediately.

Notes

For an extra burst of flavor, add a splash of fresh lemon juice before blending. Best enjoyed immediately while frosty and bubbly.
